Chocolate Mousse
I’m calling this the easiest, tastiest dessert you will ever make!! If you don’t tell anyone it’s not made on dairy, they won’t pick it.
No avocado or other freaky or super expensive ingredients either!!
The trick to this one is to leave the psyllium husks till last. Blend everything else, adjust it to taste then add ONLY 1tbsp of the husks. I know you will be tempted to add more – and if you want it to turn to a brick, then go for it. My advice is trust the measurement, refrigerate and enjoy.
I also pour into small bowls or containers for individual serves – or shot glasses for a dinner party. Guaranteed to impress and delight!
Preparation Time: 10 mins
Refrigeration Time: 1 hour but best overnight
9 Medjool dates – pitted (or normal dates soaked in hot water to soften)
1-2 tsp Vanilla
1-2Tbsp Maple Syrup
2 Tbsp Cacao
1L Coconut milk (I like Kara brand) or 2 cans coconut milk
1 Tbsp psyllium husks
Keep psyllium husks aside
Blend all ingredients until smooth
Adjust to taste
Add psyllium husks and blend again till a smooth texture
Pour into single or individual containers and refrigerate overnight.
Lasts for approx. 3-4 days in fridge
